I didn’t know what to expect from Provo, Utah, but was pleased to find it a vegetarian-friendly town. We had a few choices of places to go with lots of vegetarian menu options. We chose Guru’s, a spacious downtown eatery with a high ceiling, copper tables, big metal sculptures and cloud murals. A Buddha head and a huge picture of Gandhi were also in evidence. Yep, it looked like a surefire place to get vegetarian food.
We shared a full order of the spicy curry bowl ($11.99). The half order was only two dollars less, which made it a bad economic choice. It contained zucchini, yellow squash, green beans, carrots, snow peas, edamame, tofu, bean sprouts and cashews over rice in coconut curry sauce. We also got sweet potato fries, which came with some sort of ranch dipping sauce – vegetarian, but not vegan. After a long drive, these rich foods struck us as particularly delicious.
Guru’s opens into an equally large bakery next door called Enliten (Yes, it’s really spelled that way). I’m guessing this is probably the best place in town to get a vegan muffin or cookie, and wash it down with a soy latte.
Some nights, Guru’s has live music. On other nights, entertain yourself by watching an ever-changing presentation of menu items on large flat screen TVs.
