How would you like to have a vegan hot vegan meal at home created by a James Beard chef? How about for less than four dollars per serving? Chef Jose Garces has teamed up with Harry Lewis to cofound Casa Verde, which makes heat-and-serve meal packets. And they’re really delicious!
Casa Verde recently sent me a sampler pack to review, complete with garbanzos al pastor, lentil mole, red bean pozole and coconut chowder. You just submerge the packets in hot water for five minutes, cut open the packet and serve. In my case, I poured each packet over rice for a super easy, complete meal. If you’re really in a hurry, these dishes heat up in the microwave in 60 seconds.
Red bean pozole from Casa Verde
I was especially excited to try the red bean pozole, as I like the texture of hominy. This pozole contains Mexican corn, red beans and grilled tofu stewed with grilled onions in a traditional guajillo sauce. One cup has 230 calories. It gives you 14% of the recommended daily dose of dietary fiber, 15% of iron, 8% of calcium and 39% of sodium. Also, nine grams of protein.
